Yes...the humble pea soup DOES belong in a Gourmet cookbook. Try the recipe below - you will be pleasantly surprised
PEA SOUP
2 packages frozen peas 4 T butter
1 large minced onion 2 tsp cornstarch, dissolved in 2 T milk
1 cup milk
1 cup heavy cream Boil the peas and onion together until soft; drain and puree.
Season with salt, pepper and paprika to taste.
Add milk, cream and butter, place in a double boiler and let come to a boil.
Thicken with the cornstarch mixture, and cook gently for 5 minutes, stirring smoothly.
Season with salt, pepper and paprika to taste.
